
I've been out of clever ideas lately for good dinners. My diet is extremely restricted (no wheat, no rice), and I don't want to cook more than one meal. But I'll make an exception tonight, because this dinner takes two seconds to prepare and will be very filling!
Basically, I'll cook brown rice in the oven according to Alton Brown's Baked Brown Rice recipe. It's stupid easy and does not have to be babysat at all.
Then I'm going to take the pot I used to boil the water for the rice (I use a pot and not my kettle since you add butter and salt) and I'm going to toss a can of beans in it to simmer until heated through.
Then I'm going to toss rice in a bowl and top it with some beans, and cheese and salsa and sour cream. Voila! Meatless, inexpensive, and EXTREMELY easy to throw together. Obviously I won't be able to eat it, but I can make do with something else.
This idea came from Leanne Ely's Healthy Foods cookbook. I LOVE this cookbook, as you can tell from my review. And if you're looking for some great, healthy ways to feed your family, I HIGHLY recommend tracking down a copy of it. It appears that it can only be bought used now, but again, it's so worth it!
